Peanut Butter Cookies

- 1/2 cup (113 g) butter unsalted, at room temperature
- 3/4 cup (150 g) light brown sugar packed
- 1/4 cup (50 g) white sugar
- 1 cup (250 g) peanut butter
- 1 large egg at room temperature
- 1 1/2 tsp vanilla extract
- 1 1/2 cup (180 g) all-purpose flour
- 3/4 tsp baking soda
- 1/4 tsp salt
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together softened butter, brown sugar, white sugar, and peanut butter until smooth. Mix in egg and vanilla extract.
In a separate bowl, sift together flour, baking soda, and salt. Mix into the peanut butter mixture until well blended. Use a cookie scoop to spoon the dough, roll the dough into a ball, then use a fork to make a criss-cross pattern.
Bake 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes, then transfer onto a wire rack to cool completely.
If you have leftover dough, these peanut butter cookies freeze very well to bake at a later time. Simply roll them into balls and store them in an airtight storage bag and pop them in the freezer.
